This distinctive Hérault red blends Syrah and Mourvèdre with Cabernet Sauvignon and Counoise. Near Aniane, the vines struggle through poor limestone and stony scree, naturally giving low yields. Black fruit, cassis, wild herbs and a lift of mint form a complex Mediterranean aroma. Powerful fruit is balanced by freshness, velvety tannins and an unusually restrained profile. Each variety is fermented separately and matured in small barrels before the final blend is assembled. It has the depth for braised beef, game, lamb or robust mushroom dishes.
