The number 39 refers to the polishing ratio, meaning only 39 percent of each grain remains. The nose is delicate and fragrant, with aromas of melon, tropical fruit and white flowers over subtle rice and umami notes. On the palate Dassai 39 is smooth, creamy and beautifully balanced, combining gentle sweetness with lively but unobtrusive acidity. A clean, elegant finish with refreshing fruit makes it an excellent choice served chilled on its own or with sushi, sashimi and refined seafood dishes.
