M. Chapoutier Occultum Lapidem Rouge comes from elevated sites in Côtes du Roussillon Villages Latour-de-France. The blend of grenache and syrah is rooted in schist and gneiss and matured in concrete rather than oak to highlight purity of fruit. The nose is packed with blueberry, wild strawberry and blackcurrant, joined by incense, leather, hints of vanilla and black pepper. On the palate the wine is medium to full-bodied, creamy in texture yet fresh, with ripe, gripping tannins and a salty mineral edge. The long, spicy finish brings together richness and finesse. A contemporary Roussillon red to serve with steak, lamb chops, grilled vegetables and hearty stews.
