Old vines and careful work give the wine structure, depth and a fine mineral thread. Aromas of red and dark berries meet spice, subtle musk and lifted freshness. Whole-cluster handling, spontaneous fermentation and ageing on lees reflect Pacalet’s minimal-intervention philosophy. It pairs beautifully with game, beef, veal, white meats or mushroom dishes.
