Château Canon la Gaffelière sits at the foot of the slope just south of the medieval village of Saint-Emilion and is ranked Premier Grand Cru Classé B. Its 19.5 hectares of vines grow on warm, well-drained clay-limestone and clay-sand soils planted in roughly equal parts Merlot and Cabernet, with a strong presence of Cabernet Franc. The estate is certified organic and ferments each plot separately before ageing in oak barrels. The bouquet shows dark berries, cherry and plum with notes of violet, liquorice, graphite and a touch of smokiness. On the palate Canon la Gaffelière is deep, silky and mineral-driven, with ripe tannins, vibrant acidity and a very long, elegant finish.
