This Côtes du Jura Savagnin shows the precise, non-oxidative side of the variety. Guillaume Overnoy farms his small estate in Beaufort-Orbagna organically on marl and limestone soils. The grapes come from parcels in Orbagna and Cesancey. With ouillé ageing, the barrels are regularly topped up, so freshness and Savagnin spice remain clearly in focus. The nose suggests yellow fruit, blossom, fine spice and wet stone. The palate combines energy, saline tension and an umami-like depth. It is a compelling Jura white for roasted shellfish, mushroom dishes or mature cheese, available now from Vinofant.
