Les Béguines is one of Jérôme Prévost’s defining cuvées and shows Champagne through a deeply individual Meunier lens. The fruit comes from the namesake plot near Gueux, an old field blend led by Meunier with small shares of other Champagne varieties. Deep clay, sand and limestone soils with marine fossils give the wine substance and saline tension. Indigenous yeast fermentation, barrel ageing and a very restrained dosage shape its pure, vinous style. In the glass it is dense, complex, fresh and savoury, with impressive length. Pair it with poultry, sweetbreads, mushrooms, mature cheese or a contemplative tasting. At Vinofant, it is a distinctive Champagne for informed drinkers.
