Grauburgunder Herrenstück by Holger Koch comes from a single parcel on the Kaiserstuhl where loess soils rest on volcanic rock. Old Burgundian clones, farmed as selection massale, give naturally low yields and concentrated berries. Native yeast fermentation, long ageing on the lees and large wooden casks shape a dense yet refreshingly cool style. The nose offers ripe pear, yellow apple, citrus zest and subtle herbal tones. On the palate the wine is creamy, taut and precise, carried by lively acidity and saline minerality. It pairs beautifully with fish, white meat, mushroom dishes and refined vegetable cuisine.
