Cabernet Sauvignon Napa Valley by Joseph Phelps has become a modern benchmark for the region. The fruit comes from estate vineyards in St Helena and other cooler hillside sites, each parcel fermented separately. The bouquet shows blackcurrant, ripe plum and blackberry with tones of cassis liqueur, cedar, tobacco and graphite. On the palate the Cabernet is dense, juicy and structured, with fine grained ripe tannins and well judged oak. Dark fruit, herbal spice and a hint of cocoa bring depth and complexity. The finish is long, focused and slightly smoky. A distinguished Napa Cabernet for grilled steak, lamb, slow cooked meats and richly sauced pasta dishes.
Eighteen months in new and used French and American oak barrels give the Cabernet structure, spice and fine depth.
